This issue, we get up close and personal with Chef Ryan Shiu, Director of Kitchen at Peony Jade, Keppel Club to share his thoughts on the Mid Autumn Festival.

Q: What do you remember most fondly about the Mid Autumn Festival?

RYAN: When I was a child, the festival always coincided with the school holidays so it was a very fun and carefree time. My family would gather to enjoy good food while the kids played with the beautiful lanterns under the moonlight.

Q: What is the significance of such Chinese festivals and their celebrations?

RYAN: I think many Chinese festivals such as Mid Autumn Festival are important in our fast-paced lifestyle today. They helped to bond families together as they celebrate and catch up during these occasions. Besides, the many interesting legends and stories behind these festivals, like how the Chinese organised a united revolt against Mongolian rule by slipping paper in the mooncake filling, helps to promote values such as the spirit of unity to be shared with the younger generation.

Q: What are some of your favourite mooncakes?

RYAN: My personal favourites are the Peony Jade Low Sugar Baked Premium White Lotus Paste with Macadamia Nuts & Double Yolk and the new Snow-skin Japan Yuzu Truffle with Orange Walnut Paste. They are made with less sugar, no preservatives, essence or colouring and freshly baked daily.

Q: What's the best way to enjoy mooncakes?

RYAN: Mooncakes should be enjoyed with a pot of freshly brewed Pu-er tea.

Q: How do you intend to celebrate the festival this year?

RYAN: I will be working but I will make it a point to enjoy some mooncakes and tea with my colleagues and more importantly, catch up with family and friends in Hong Kong via MSN.

Q: Any delicious mooncake creation ideas in store for 2011?

RYAN: They will be petite-sized mooncakes which can be enjoyed in just one bite! Definitely less sweet, healthier and filled with my favourite fruits like mango or pineapple.
